Chicken and Veggie Skewers


Ingredients
- 1 Jar Vero Gusto Sicilian Herb
- 2 Lb. Chicken breast, medium cubes
- 8 wooden skewers (12")
- 3 Tbsp. Extra Virgin Olive Oil
- 1 Zucchini, medium dice
- 1 Squash, medium dice
- 1 Red pepper, medium dice
- 1 Eggplant, medium dice
- 1 Pt. Cherry tomatoes
- 1/2 Cup Parsley, chopped
- Salt to taste Black pepper to taste
Directions
- Mix olive oil with 2 tbsp. of Vero Gusto, salt, pepper, and a tbsp. of parsley. Mix with chicken. Marinate 1 hr. to overnight.
- Soak wooden skewers in water for 15-30 minutes to prevent burning. Skewer chicken, about 4-5 pieces per skewer.
- Grill over med/ high heat for 4-5 min. on each side (9-10 min. total), or until done.
- Heat remaining Vero Gusto in a small pot or microwave for 1-2 min. Garnish skewers with remaining parsley.
- Mix olive oil with 3 tbsp. of Vero Gusto, salt, pepper, and a tbsp. of parsley. Mix with vegetables. Marinate 30 minutes to 1 hr.
- Soak wooden skewers in water for 15-30 minutes to prevent burning. Skewer vegetables, 10 pieces per skewer, alternating vegetables.
- Grill over med/ high heat for 2 min. on each side (4 min. total), or until done.
- Heat remaining Vero Gusto in a small pot or microwave for 1-2 min. Garnish skewers with remaining parsley.
