Summer Vegetable Ratatouille

Ingredients

  • 2 cups Vero Gusto Sicilian Herb sauce
  • 5 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 garlic clove, minced
  • 1 onion, small dice
  • 1 potato, small dice
  • 2 carrot, small dice
  • 2 celery stalk, small dice
  • 1 green pepper, small dice
  • 1 red pepper, small dice
  • 1 yellow pepper, small dice
  • 1 cup cauliflower, medium florets
  • 1 zucchini, small dice
  • 1 yellow squash, small dice
  • 1 sweet potato, small dice
  • 1 tbsp capers
  • 1 tbsp oregano
  • 1 tbsp mint
  • ¼ cup parsley
  • ¼ cup basil

Directions

  1. Preheat oven to 425° F.
  2. Mix 3 tbsp of olive oil with sweet potato, potato, peppers, cauliflower, zucchini, squash, carrot, celery, vinegar, salt and pepper. Roast for 10-12 minutes or until medium soft.
  3. Meanwhile in a skillet over medium heat, sauté garlic and onion until translucent, about 2-3 minutes. Add oregano and capers, cooking one additional minute.
  4. Add Vero Gusto, ½ of the mint, parsley and basil. Bring to a simmer. Add roasted vegetables to the sauce and mix together.
  5. Garnish with remaining herbs and serve.
